Easy apple pie recipe and how to make a homemade pie from scratch with celebrity pie baker, Beth Howard. Beth has made pie for stars like Barbra Streisand (lemon meringue), Dick Van Dyke (strawberry rhubarb), and Steven Spielberg (coconut cream).
She’s also a rebel pie maker! Beth doesn’t like to measure. She says, “Every pie should be unique and reflect your personality. Pie is not about perfection. It should look homemade. People should know that you made this with your own two hands.”
Pie Dough
2.5 cups flour (white all-purpose) plus 1 cup for rolling
1/2 cup butter, chilled
1/2 cup crisco
Dash of salt
Ice water (fill 1 cup but use only enough to moisten the dough)
Pie Filling
7 large Granny Smith apples, peeled (3lbs)
3/4 cup sugar
4 tablespoons flour
Dash of salt
1 to 2 teaspoons cinnamon
1 tablespoon butter (dollop on top before covering with top crust)
1 beaten egg (just enough to brush on pie before baking)
It was an amazing afternoon! I thought I was going to learn how to make pie, but I learned that pie can heal and bring people together. I had so much fun giving away the free pie. I saw that such a simple thing as giving of yourself can provide so much joy.
